Sharkara - Ayurvedic royal sugar (cane sugar), 500 g

In the traditional Ayurvedic scriptures Sharkara, made from sugar cane, is considered the best Ayurvedic sugar. This royal sugar is produced exclusively in small factories with great effort for Amla Natur according to traditional Ayurvedic guidelines The special manufacturing process of Sharkara reduces the acid-forming components of sugar cane, which are particularly found in the nodes and roots of the plant.

Sharkara is very mild and, according to Ayurveda, is said to have a harmonizing effect. It particularly calms the doshas Vata and Pitta. The acid-forming components of the sugar cane are found in the knots and root parts of the plant. These components are removed from the sugar through the cleaning process and the subsequent slow recrystallization. It loses about 1/3 of its volume during production. After crystallization into large, uneven, slightly yellowish crystals, Sharkara is dried in the sun in the heat of the Indian summer. In the process, it "ripens" and gains its Ayurvedic potency. It is then broken into small pieces and ground.

It is common practice to bleach sugar with sulphuric acid at the end of the refining process. This causes it to lose its Ayurvedic qualities. The genuine Sharkara from Classic Ayurveda is not treated with sulphuric acid or bleach, which you can tell by its slightly greyish colour. Its pH value is almost neutral.
